1. How many pounds per week does your household typically consume of beef, chicken, pork, and lamb ? (Please list separately)
- Viola: 1lb chicken, 1-2lb beef or lamb, 2-3lbs pork (including salumi and sausages), 1-2lbs veal (Pork is our favorite meat, we love long fibers and braising cuts of beef, we also do a lot of stews and meat sauces. Chicken is fine, we would probably also go for things like geese and guinea fowls)
- Bonnie P: 2 lbs beef, 1 lb chicken, 1 lb pork or lamb (like to alternate)
- SPM: 1 lb. beef, 2 lb chicken, 1 lb pork or lamb (like to alternate)
- Jeff & Alice: 1 lb beef, 1 lb chicken, 1 lb pork or lamb (like to alternate)
- Joanna: 3 lbs beef or lamb once per month (we usually eat larger amounts of beef/lamb less often in braises/roasts); 2 lbs chicken; 3 lbs pork once per month (again, in braises/roasts) plus <1/2 lb pork/week in cured pork products such as bacon, pancetta, etc.
- Meloukhia: still waiting to hear from the rest of the household (same goes below too) but I'm going to say 2 lbs beef, 2 lbs chicken, 1 lb lamb. I don't eat much pork but the rest of the house probably does, and I am interested in cured pork products/sausages if available.
- Tracy: 1 lb. beef, 2 lbs. chicken, maybe 1 lb. pork every other week. No lamb.
- Sylvia: 2 lbs beef, 1 lb chicken, 1 lb pork, would like to try incorporate lamb, sausages, etc.
- Wendy: 3-4 lbs. pork, 4-6 lbs. chicken, 1lb. beef, 1lb. lamb
- Cherie: 1 pound beef, 2 pounds chicken, 1 pound pork, 1/2 pound lamb. Just me – my roomie’s vegetarian, but I am one hungry girl with lots of houseguests.
- Sarah: 1 lb beef, 1 lb lamb, 1 lb turkey (I know you didn't ask about turkey, but I love ground turkey!). No pork or chicken.
- Jennifer: 1-3 lbs beef, 1 chicken (4 lbs or so); or a big pork or lamb roast (like 5#). alternating would be good; I'd be fine with a number of arrangements, actually, if availability of various meats changes week to week.
- Rebecca: One of the following (we don't eat a huge amount of meat but want it to be good): 3 lbs chicken, 2 lbs beef, 1 lb pork or lamb. We'd be interested in cured pork and sausage products too.
- Shannon: 1-2 lbs beef, 2-3 lbs chicken, not much pork or lamb, but I'm willing to try them! Like a few others, I prefer larger cuts of meat with more variation. And sausage is good!

4. Feelings about offal (tripe, brains, liver, sweetbread, tongue)
- Viola: Absolutely adore them with liver being at the bottom of my list (unless it is calf's liver) and brains/sweetbreads at the top. I will also take lungs, heart, oxtail, bones with marrow, jowls...more than happy to give up my filet for any of it any day!
- Bonnie: Willing in spirit, but a little nervous.
- SPM: Pass.
- Jeff&Alice: Offal is awful. Pass.
- Joanna: Very interested in offal (and off cuts for braising, fatback, trotters, ox tail, etc.); in fact we are *less* interested in quick cuts such as chops/steaks
- Meloukhia: I'm down. Especially with liver!
- Tracy: My dog loves grassfed offal, but we buy that in a separate co-op.
- Sylvia: good with liver, can always try others, but not on a regular basis
- Wendy: Family will not eat (but I like trotters and sweetbreads!)
- Cherie: Yum Yum! I’d also prefer bones and odd bits to the plain-ol steaks, but my oft-visiting boyfriend will be heartbroken if the occasional steak doesn’t make it every once in a while. Love tongue, tail, any bones and offals except liver.

- Jennifer: Yes liver and sweetbreads and especially oxtail; maybe an occasional tongue.
- Rebecca: not so much.
- Shannon: not very interested, though if it comes with recipes, I'll experiment

- Suzy & Eric: Yes for tongue, sweetbreads, brains. No thanks to tripe and kidneys. Never tried oxtail but like to try!

- Marcia: liver, and bones. I am also willing to learn to cook others, such as oxtail (love eating it!).
- Steve: I'm always interested in trying something new and enjoyed various kinds of offal in the past at restaurants. However, my wife is not as interested.
- Jonathan: veal sweetbreads are tops; tripe is good (honeycomb preferred); I badly need lamb and beef bones for stock (lots of 'em); liver, not so much; brains, not at all; oxtail, sure. Basically, Joanna (above) speaks for me...
